Hiram Walker, a successful grain merchant in Detroit, purchased land across the Detroit River in Ontario and established a distillery in 1858. He was the first Whisky producer to label his bottles with a special brand, initially known as Hiram Walker but later gaining fame in gentlemen’s clubs as Club Whisky.

Canadian Club is an exceptionally smooth and versatile Whisky, distinguished from other Blended Whiskies by its unique blending process. Unlike other labels, the blending takes place before maturation. Corn, rye, rye malt, and barley malt are separately mashed, fermented, and distilled. Then, the different spirits are blended before being filled into barrels. This method, favored by Hiram Walker, the father of Canadian Club Whisky, allows each grain’s characteristics to shine, resulting in the best aromas.

The base Whisky is made from corn distillate, which is nearly odorless and tasteless, making up the majority of Canadian Club Whisky. Rye Whisky and Malt are added to bring character and flavor to the blend. Each release of Canadian Club has its own unique taste, as they follow distinct recipes.

The most famous and top-selling release is the 1858, produced the same way as when Hiram Walker started in 1858. It is a fresh and soft Whisky, offering sweet vanilla, spicy aromas, and hints of rich oak. Bottled at 40% ABV (80 proof), it is an easy-to-drink choice.

Canadian Club Small Batch is a complex and balanced Whisky, aged for 12 years in seasoned, char – treated oak Bourbon barrels. It combines creamy vanilla, honey, fruits, and spicy notes in a delicate way.

Canadian Club Chairman’s Select 100% Rye is a premium Whisky made from 100% single grain rye, delivering a very spicy character with balanced caramel, oak, and creamy notes. It is a warm and complex Whisky with enticing aromas.

The Mashing and Fermentation:

Correct, in the production of Canadian Club Whisky, the mashing and fermentation of the different grains (corn, rye, rye malt, and barley malt) are done separately. Each grain is processed individually to bring out its unique characteristics before they are blended together to create the final Whisky. This process allows for greater control over the flavors and aromas of the different grains, resulting in a well-balanced and distinctive blend.

The Distillation:

In the production of Canadian Club Whisky, the continuous stills receive the beer that leaves the fermenters. At this stage, the different grains (corn, rye, and malt) are not mixed. The corn, rye, and malt beers are distilled separately. Only when the spirit is ready to be filled into the casks, it is blended following the old traditional recipes. This blending process ensures that each grain’s unique characteristics are preserved and that the final Whisky has a balanced and distinctive flavor profile.

Warehouses:

Canadian Club Whisky is matured in white oak American Bourbon barrels, which contributes to its pleasant and distinctive, yet not overpowering oak flavor. During the maturation process, a portion of the Whisky evaporates into the air, known as the “Angel’s Share”, and in the case of Canadian Club, it amounts to about 3%.

After aging for three years or more, the bottling of the Whisky takes place at the Canadian Club Distillery itself. This on – site bottling ensures that the Whisky is handled with care and maintains its quality throughout the entire production process.

The Canadian Club Heritage Center in Ontario serves as the heart, soul, and historic memory of the company. Completed in 1894, the center and its grounds have become a popular tourist attraction.
