Crafty Distillery’s Billy & Co Single Malt pays tribute to the founder’s late father, William James Taylor, who played a vital role in establishing the distillery alongside his son Graham. This classic Lowland Scotch Whisky undergoes extensive experimentation with various yeast strains. Before the first fully matured whisky is bottled, the distillery operates a Founders Club consisting of 695 members who actively contribute to the creation of the Single Malt. Throughout the maturation process, club members receive 17 sets of five tasters, allowing them to sample and provide online feedback on the whisky’s development. This collaborative approach aims to shape a whisky that reflects the collective input of the community. Founders Club members also enjoy the exclusive opportunity to purchase the initial casks.

The Gin:

Crafty Distillery produces Hills & Harbour Gin, drawing inspiration from its location in the Galloway Hills and at the harbour of the River Cree. The natural flavors of the surrounding mountains and coast play a significant role in shaping the gin’s taste profile. The distillery incorporates locally sourced ingredients, including noble fir needles and bladderwrack, a brown algae with medicinal properties. The distillery also distills its own base alcohol, using locally grown wheat that is milled on-site and fermented for seven days, adding time and expense but enhancing the flavor. Hills & Harbour Gin features additional botanicals such as fruity mango, orange peel, spicy Szechuan peppercorns, bay leaves, and, of course, juniper, resulting in a well-rounded and aromatic gin.

Within the visitor centre, guests can explore a shop offering a selection of products. Additionally, there is a charming ‘Tree Bar’ where visitors can enjoy their beverages. The bar’s counter is crafted from a single trunk of a Douglas fir tree, creating a unique and cozy atmosphere.
