Introduction:
The Single Malt Kombu Cask produced by Origin Spirits undergoes a unique finishing process to enhance its flavor profile. After maturation in Bourbon casks, the whiskey is transferred to Virgin Oak casks that have been charred with Atlantic Kombu Seaweed. This seaweed, harvested in Ireland, imparts a distinct umami aroma to the casks, which in turn infuses the whiskey with its unique characteristics.
Similarly, the Single Malt Atlantic Wakame Seaweed Cask from Origin Spirits goes through a similar process. After initial maturation in ex-Bourbon casks, it receives a finish in casks charred with wakame seaweed. Wakame, a green seaweed also sustainably harvested along the Atlantic coast, adds its own unique influence to the whiskey’s flavor profile.
The Currach Whiskey takes its name from the traditional Irish boat made of wicker, animal skins, and tar, which has a rich history dating back to the Neolithic period. These boats were not only used for transportation but also played a role in collecting religious artifacts. Today, the Currach boats are still utilized in Ireland for the harvesting of seaweed.
Origin Spirits embraces the connection between whiskey production and Ireland’s coastal heritage by incorporating seaweed finishes and drawing inspiration from traditional Irish practices. The Gin:
Ornabrak Gin takes its name from the Gaelic phrase ‘orna Braiche’, which translates to ‘malted barley’, This name reflects the key ingredient used in its production.
The Gin is crafted using 100% Irish malted barley as its base, showcasing the rich flavors and characteristics of this grain. It undergoes four distillation processes in copper pot stills, which helps to refine and concentrate the flavors of the botanicals.
For the fifth and final distillation, Ornabrak Gin is infused with a carefully selected blend of botanicals. These include Douglas fir needles, angelica root, lemon verbena leaves, lemon peel, and juniper. Each botanical contributes its unique flavors and aromas to the final spirit, resulting in a balanced and distinctive Gin.
The combination of the malted barley base and the selected botanicals creates a flavorful and complex gin that captures the essence of its Gaelic heritage. Ornabrak Gin offers a unique taste experience that reflects the meticulous craftsmanship and attention to detail in its production process.
The Production:

The barley used in their spirits is sourced from contract farmers, primarily located in the south-east region of Ireland. It is important to note that the barley used is not genetically modified, ensuring the integrity of the grain and aligning with Origin Spirits’ commitment to natural and sustainable practices.
Once the barley is sourced, it is malted in Cork, further enhancing the flavors and characteristics of the grain. Following malting, the barley is milled in West Cork before undergoing the mashing, fermentation, and distillation processes.
For their Whiskeys, the spirit is distilled three times in copper pot stills, which allows for the refinement and concentration of flavors. In the case of their Gins, the spirit undergoes an additional distillation, bringing the total to four, resulting in a harmonious blend of botanical flavors.
