The Gin:

The production of the Blackforest Creative Wild Gin involves the utilization of an impressive array of 65 botanicals, segmented into smaller groups like citrus fruits, juniper, and spices. Each group is subjected to individual maceration and distillation processes.

In contrast, the Traditional Wild Gin is rooted in the classic London Dry Gin style. Alongside a well-balanced juniper essence, this Gin boasts an assortment of fresh botanicals, including basil, lemon, lime, and ginger, culminating in a total of 45 ingredients. Employing a steam extraction technique, the distillation process captures the essence of these botanicals. Unlike soaking the citrus peels in alcohol, here they are placed within an aroma basket, suspended within the rising alcohol steam. This method ensures gentle extraction of citrus aromas, yielding a more pronounced and intensified flavor.

Before the Gins are bottled, they are matured within clay amphorae for a duration ranging from six to twelve months.

The Rum:

Alongside their Whisky and Gin offerings, the distillery also produces the noteworthy Blackforest Wild Rum.

For their Madeira Cask Rum, the distillery begins with organic sugar cane molasses, which undergoes spontaneous and open fermentation. This is followed by a double distillation process that imparts fruity and estery notes. After maturing for a decade in French oak barrels previously used for bourbon and cognac the contents are blended.

The Blackforest Spiced Rum Barrique, on the other hand, is crafted using sugar cane molasses sourced from Paraguay. Prior to fermentation spontaneous and devoid of pure yeasts the molasses is mixed with Black Forest spring water. The Rum then undergoes a double distillation in copper stills. This particular rum matures for a period of six years, utilizing six distinct barrels in the aging process.

The Storage:

The Blackforest Sherry Cask Rum, subjected to a triple distillation process, experiences an eight – year maturation. Three distinct casks are employed, with the Pedro Ximénez Sherry cask taking the spotlight. These casks are directly imported from Jerez de la Frontera, and the Blackforest Wild Whisky is promptly introduced into them shortly after they are emptied.

Following a double distillation, the Blackforest Peated Rum is aged for six years in a combination of American white oak barrels, Bourbon casks, and Cognac casks. This meticulous aging process accentuates its fruity characteristics, harmoniously complementing the smoke notes within the Rum.
